Potatoe Rolls

bake 400 yield 4 dozen
Goering

Potatoe* Rolls

2 Cups milk
1 Cup shortening
1 cup sugar
2 cups mashed potatoes
2 eggs
2 teaspoon salt
2 cakes yeast
1/4 cup lukewarm water
2 cups flour - mix, let raise 2 hours. Add
5 cups flour - knead til smooth. Let raise til double and shape.

April Fool Cake

2 1/2 # lean ground turkey breast or lean beef
1 medium onion chopped
1 cup Italian flavored bread crumbs
1 cup catsup
2 eggs
1 teaspoon salt
1/2 teaspoon black pepper
4 cups warm mashed potatoes
8 cherry tomatoes

Preheat oven to 375. Spray bundt pan. Combine turkey, onion, crumbs, catsup, eggs, salt & pepper. Put into bundt pan and bake for 1 1/4 hr. Drain off liquid and allow to sit for 5 minutes. Frost with mashed potaties and garnish with cherry tomatoes.

Coffee Cake

1 stick plus 2 Tablespoons margarine
1 cup sugar
2 eggs
2 cups flour
1 teaspoon soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla
1 cup sour cream
1/2 cup water

Crumbs:
3/4 cup brown sugar
3/4 cup white sugar
3/4 cup chopped pecans or black walnut

Cream margarine and sugar. Add eggs and beat well. Sift dry ingredients and add alternatively with sour cream, water, and vanilla. Beat well. Put half of batter in 9-inch by 13-inch pan. Sprinkle on half of crumbs, then add remaining batter, then rest of crumbs. Bake 350 degreesfor 50 minutes.

Quick Coffee Cake

use aluminum pan

2 1/2 cups sifted flour
1 cup brown sugar
3/4 cup white sugar
1/2 teaspoon salt
1 teaspoon cinnmon
3/4 cup salad oil

Mix above ingredients thoroughly and remove 1/2 cup crumbly mixture to use as a topping and mix in 1/3 cup nuts.

1 teaspoon soda
1 cup buttermilk
1 teaspoon baking power
1 egg

Mix soda and baking powder with crumbly mixture. Mix beaten egg and buttermilk. Add half of liquid to crumbly mixture and beat at medium speed for 2 minutes. Add rest of liquid and beat 2 minutes longer. Place in pan and sprinkle topping mixture on. Bake at 350 degrees about 30 minutes.

Coffee Cake (Mom)

375 degrees 15 min
2 - 12x9 pan

2 cups scalded milk cooled
2 cakes yeast
1/2 cup water
3/4 cups shortening
3 T. sugar
3 teaspoons salt (1 Tablespoon)
1 1/2 cups raisins
4 1/2 cups flour

I heard one of my brothers is yearning for mom's coffee cake.
The word "Mom" in the upper left corner of this recipe card probably refers to Helen Toevs Regier, our mother's mother. But when I see it, I think, "Oh, this is mom's recipe!" After all, she signed her letter's Mom.
So, another question not asked at the right time: when she wrote Mom in the corner of a recipe card, was it telling us that THIS is the coffee cake recipe one (actually two, now that I'm thinking of it) of us is hungry for, or was she reminding herself that it was her mother's coffee cake?
